Easy Low-Carb Apple-Walnut Coffee Cake

Well here we are. I’m back to work with a new recipe on the blog after, oh I dunno… how many months has it been? If you’re wondering where I’ve been, listening to this quick update on the podcast might help.

A lot has happened since I first shared that news with listeners, members of the Facebook group and members of my Wellness Exclusive Patreon group. But most importantly, I’m happy to share today that I’m done with chemo. And as I sit here writing this post, I am just hours away from surgery to remove what’s left of my tumor.

From what my (brilliant, wonderful and caring) surgeon tells me, the surgery should be the easiest thing I’ve done so far… and I’m counting on him to be right.

Now that we’ve got that update out of the way, let’s talk coffee cake.

But we’re not talking about just any coffee cake. Let’s talk about this grain-free, gluten-free, no-sugar-added, keto-friendly coffee cake.

I’d be lying if I said I spent a ton of time during chemo cooking.

Seriously… nothing can take away your desire, appetite and energy for cooking like a good dose of chemo.

But I *did* find the time… especially early on when my energy was at its highest… to begin the process of perfecting a new area of baking for me — keto-friendly baking.

While I didn’t set out necessarily to bake a ton of *keto-friendly* recipes, I realized early on in my new baking endeavor that a sure-fire way to find inspiration for grain-free & sugar-free recipes (that’s where my current recipe/cooking interests lie) was to look through keto-friendly recipes. What was a baking unicorn about 5 years ago is now a pretty huge trend on Pinterest.

Here’s the thing, though. A lot of the keto-friendly baking recipes you see online are simply over-the-top — too elaborate, too involved and just too much to eat. I wanted to create a comfort-food like snack cake recipe that I could easily eat in the afternoon and still be hungry for dinner.

And that’s where today’s recipe — created as a part of a sponsored recipe contest with California Walnuts — comes in.

California Walnuts challenged members of our network of bloggers over at Healthy Aperture to think outside the box by adding walnuts to their tastiest, healthiest and most creative snacking creations.

Honestly, one of my all-time FAVE walnut-based snacks is to simply tuck a walnut into a date with a couple of sugar-free chocolate chips. But in keeping with my recent obsession with keto-friendly baking, I thought I’d take it just a little further and this keto-friendly coffee cake was born!

It’s simple to make; deeply nutritious with the 2 tablespoons of California Walnuts per serving; a great way to enjoy the a fruit-based dessert if you’re currently keeping your carb consumption on the lower side; and perfect for enjoying as an afternoon pick-me-up or late morning sweet fix.


{Keto-Friendly} Apple-Walnut Coffee Cake

  • 1/2 cup coconut flour
  • 1/4 cup walnut flour
  • 3/4 cup Swerve, brown
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon Kosher or sea salt
  • 3 large eggs
  • 1/2 cup unsweetened walnut milk
  • 2 tablespoons olive oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract (optional)
  • 2 teaspoons liquid stevia
  • 1 cup chopped California Walnuts
  • 1 small Granny smith apple, chopped
  • 2 tablespoons melted butter



  1. Preheat oven to 350 degrees F. Coat a small cake plate with cooking spray and set aside.

  2. Whisk together coconut and almond flour, Swerve, baking powder, cinnamon, xanthan gum and salt in a small bowl.

  3. Whisk together eggs, milk, oil, extracts and stevia in a large bowl. Add flour mixture and stir until combined.

  4. Spoon batter into prepared dish and top with California Walnuts and chopped apple; drizzle with butter.

  5. Bake for 35 minutes or until cake is golden brown and set in center. Let cool at least 10 minutes before slicing. (Store leftover cake in refrigerator).
