Gluten-Free Panzanella

Ingredients

  • 1 red bell pepper, cut into 1-inch chunks
  • 1 yellow bell pepper, cut into 1-inch chunks
  • 1 cucumber, peeled, seeded and cut into 1-inch piece
  • 1 tomato, diced
  • 1 cup loosely packed Italian flat-leaf parsley, chopped
  • 3/4 teaspoon Kosher salt
  • 1/4 to 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 3/4 cup toasted pecans or walnuts
  • 3 cups toasted gluten-free bread cubes

Instructions

  1. Toss all ingredients (except bread cubes) and let stand at least 30 minutes. Just before serving toss in bread cubes.
