I had an ugly cry the day we announced The Recipe ReDux was closing.

If you’re new to this site and came by way of the podcast, The Recipe ReDux may not be a term you’re familiar with. It was the online cooking challenge I dreamed up eight years ago and quickly enlisted the help of longtime colleagues, Deanna Segrave-Daly and Serena Ball, to provide a way for registered dietitian and healthy living bloggers to connect online.

I’m not really sure why I cried so intensely. I had known this day was coming for a while. Deanna, Serena and I had been discussing the changing nature of the blogging community. We knew that ReDux had fulfilled its purpose — to provide a community of like-minded bloggers the opportunity to connect and blog together monthly on a common theme. But we also knew over the last year or so that the online space had given birth to numerous new ways for bloggers and influencers to support one another online.

We knew we were here first. But we also knew we didn’t need to be here last.

I suspect some of the tears were the release of eight years worth of hard work; some were the acknowledgment that while our friendship remains strong, my day-to-day working relationship with the Teaspoon gals is diminishing; and some were tears that seem to both naturally soften and celebrate the closing of any good chapter of life.

I’ve learned that while weeping with regret may outwardly look a lot like weeping with fulfillment, they’re very different on the inside. It’s the difference between knowing how good it all once was, rather than wondering what could’ve been.

I’m forever grateful to both Deanna, Serena and every blogger who blogged with us all these many years for giving me a chance to know how good it all could be. ~Regan

Gluten Free Raspberry Coconut Bars

When you need a quick and easy bar cookie recipe that will wow your guests, this Gluten Free Raspberry Coconut Bar recipe is it!

Ingredients

  • 1 recipe kumquat’s grain free pie crust
  • 1 (15-ounce) jar raspberry fruit preserves
  • 2 cups (about 180 g) flaked sweetened coconut
  • 1 1/2 cups granulated sweetener*
  • 1/4 cup butter
  • 1 large egg
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350 degrees F. 
  2. Press kumquat’s pie crust into bottom and partially up sides of a 13- x 9-inch baking pan. 
  3. Spread preserves evenly over crust. 
  4. Combine remaining ingredients and drop by spoonfuls over preserves. 
  5. Bake for 30 minutes or until preserves are bubbly and coconut is toasted. 
  6. Let cool completely before slicing into squares.
