I feel like I’m obligated to make boiled peanuts every week this football season.

Why?

Well, I made them last week and my Auburn Tigers pulled out ONE HECK OF A NAIL BITING WIN on Saturday night.

You know that’s how it works, right?

You make a dish for a game. Your team wins. You’re obligated to make it again and again, until the mojo breaks.

I’ve been down this road before.

In 2017, during the Auburn/Alabama game, I baked. A lot. We’re talking quick breads, bar cookies, from scratch icing.

Auburn won that game.

And you better believe I was baking any chance I could after that…until the baking stopped work. (Such is the life of a college football fan.)

So this week for our home-based tailgating (or tablegating I guess you could say), I’ll be bringing out the boiled peanuts once again.

But I’ll also be adding a little something special to the spread in the form of my homemade HEALTHY PIMENTO CHEESE.

I’ll be honest with you, pimento cheese can be hit or miss.

There are some commercial brands that are really good. I’m a pretty big fan of the Palmetto brand, especially the one with jalapenos. But at the end of the day, pimento cheese can also bring with it a hefty fat/calorie count. I’ve trimmed it up slightly by using a high-quality reduced-fat cheddar WITH regular cheddar and opting for Greek yogurt in place of mayo.

The result is a healthy pimento cheese recipe that’s still a crowd-pleaser… and with any luck, maybe a win comes with it? I’ll let you know how that turns out next week. ~Regan

Lightened Pimento Cheese

Classic homemade pimento cheese gets a healthy makeover in this Healthy Pimento Cheese recipe. Guests and friends around your tailgating table won’t know the difference!

Ingredients

  • 1 cup (4 ounces) shredded sharp cheddar cheese OR shredded pepper jack
  • 1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese (I use Cabot’s 50% Lite)
  • 2 tablespoonplain Greek-style yogurt
  • 1 (4-ounce) jar chopped pimentos
  • 1/2 teaspoon Kosher salt
  • Freshly ground black pepper
  • Dash of hot sauce

Instructions

  1. Combine all ingredients; refrigerate until ready to serve.
