The decadent taste of bread pudding in a quick and easy, individual serving — topped with a luscious orange juice bourbon sauce!

Ingredients

2 large eggs, lightly beaten
1/4 cup half and half
1/4 cup sugar
1/2 tablespoon vanilla
1/2 teaspoon ground cinnamon
4 pieces stale bread cubes, cut into cubes
6 apple slices
Sauce:
1 1/2 cup 100% orange juice
2 tablespoons butter
2 tablespoons bourbon
1 cup powdered sugar
Instructions
Combine eggs, half and half, sugar, vanilla, and cinnamon. Divide bread cubes evenly among 6 muffin tins coated with cooking spray. Pour egg mixture over bread cubes; top evenly with apple slices and let stand.
To make sauce: Add orange juice to a small saucepan; simmer until reduced to a very thick sauce (about 30 minutes.) Remove from heat; add butter, bourbon and powdered sugar, stirring until smooth. Pour pour half of mixture evenly over bread puddings; reserve remaining half.
Preheat oven to 350 degrees F.
Bake individual bread puddings for 20 – 25 minutes or until done. Pour remaining sauce over bread puddings to serve.
