Morning Glory Quick Bread

Morning Glory Quick Bread made with high fiber cereal

The classic Morning Glory breakfast muffin gets a quick and easy makeover in this quick bread. Subtly sweetened with honey and sporting a fiber boost thanks to Fiber OneTM Original cereal, this quick bread makes a wonderful start to your day or as a tasty snack. 

 

Ingredients

  • 1 cup Fiber OneTM Original cereal 
  • 2 cups unbleached all-purpose flour 
  • 1 tablespoon ground cinnamon
  • 1 tablespoon pumpkin pie spice 
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt 
  • 2 medium-size carrots, shredded (about 1 cup)
  • 1 apple, shredded (about 1/2 cup)
  • 1/3 cup raisins
  • 1 cup honey 
  • 1 cup buttermilk
  • 2/3 cup oil
  • 1 large egg
  • 2 teaspoons raw sugar (optional)

Instructions

  1. Preheat oven to 350 degrees F. Line a loaf pan with parchment and coat with cooking spray.
  2. Pulse cereal in a food processor until coarsely ground. Add flour, cinnamon, pumpkin pie spice, baking powder, baking soda and salt; pulse slightly to mix. Pulse in carrots, apple and raisins. Add honey, buttermilk, oil and egg; pulse just until dough forms.
  3. Spoon batter into prepared pan. Sprinkle top of batter with raw sugar, if desired. Bake for 50 minutes or until wooden pick inserted into center of loaf comes out clean. 
  4. Let cool on a wire rack 10 minutes; remove from pan and let cool completely.
