Morning Glory Quick Bread
The classic Morning Glory breakfast muffin gets a quick and easy makeover in this quick bread. Subtly sweetened with honey and sporting a fiber boost thanks to Fiber OneTM Original cereal, this quick bread makes a wonderful start to your day or as a tasty snack.

- 1 cup Fiber OneTM Original cereal
- 2 cups unbleached all-purpose flour
- 1 tablespoon ground cinnamon
- 1 tablespoon pumpkin pie spice
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 medium-size carrots, shredded (about 1 cup)
- 1 apple, shredded (about 1/2 cup)
- 1/3 cup raisins
- 1 cup honey
- 1 cup buttermilk
- 2/3 cup oil
- 1 large egg
- 2 teaspoons raw sugar (optional)
Instructions
- Preheat oven to 350 degrees F. Line a loaf pan with parchment and coat with cooking spray.
- Pulse cereal in a food processor until coarsely ground. Add flour, cinnamon, pumpkin pie spice, baking powder, baking soda and salt; pulse slightly to mix. Pulse in carrots, apple and raisins. Add honey, buttermilk, oil and egg; pulse just until dough forms.
- Spoon batter into prepared pan. Sprinkle top of batter with raw sugar, if desired. Bake for 50 minutes or until wooden pick inserted into center of loaf comes out clean.
- Let cool on a wire rack 10 minutes; remove from pan and let cool completely.
