What do cereal and chili have in common?

Usually, not much. But today, they’re playing nice with each other in this NEW RECIPE I created for Fiber Fiber OneTM. It’s a QUICK & EASY VEGETARIAN CHILI sporting a nice boost of fiber through the addition of my fave high-fiber cereal, Fiber OneTM Original.

Trust me on this. You’ll never know it’s in there, but it is… working its fiber magic. It also helps thicken the chili, making it an even quicker and easier recipe when it’s all said and done.

Quick & Easy Vegetarian Chili

Ingredients

  • p.p1 {margin: 0.0px 0.0px 0.0px 0.0px; font: 11.0px Helvetica; color: #000000}
    span.s1 {font: 7.3px Helvetica}
    1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup Fiber OneTM Original Cereal
  • 2 tablespoons chili powder
  • 2 (16-ounce) cans mild or medium chili beans
  • 1 (24-ounce) jar tomato and basil spaghetti sauce
  • 1 cup water

Instructions

  1. Heat olive oil in a large Dutch oven; add onion and bell pepper. Cook 5 minutes. 
  2. Stir in remaining ingredients. Cover and cook 20 minutes, stirring occasionally. 
  3. Uncover and cook 10 additional minutes. Serve immediately.
