Veggie chili has never been easier or more fiber-rich than this Quick & Easy Vegetarian Chili featuring Fiber OneTM Original cereal. Using a pre-made jarred pasta sauce, there’s no need for a long slow simmer. It’s ready in 30 minutes.

    1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup Fiber OneTM Original Cereal
  • 2 tablespoons chili powder
  • 2 (16-ounce) cans mild or medium chili beans
  • 1 (24-ounce) jar tomato and basil spaghetti sauce
  • 1 cup water

Instructions

  1. Heat olive oil in a large Dutch oven; add onion and bell pepper. Cook 5 minutes. 
  2. Stir in remaining ingredients. Cover and cook 20 minutes, stirring occasionally. 
  3. Uncover and cook 10 additional minutes. Serve immediately.
