Sleepless nights don’t hit me as much as they used to. But when they do hit, I bake.

I found myself in the midst of an early-morning wide-eyed session last week after my husband got up to visit the bathroom and promptly nestled back into deep sleep… while I lay there knowing there was no return to dreamland for me.

I got up. Finished editing The Online Clothing {Consignment & Rental} Episode of the show, and decided I was stuck somewhere between having enough brain power to prevent going back to bed, but not enough to start any intense projects.

So I did what I do best. I baked up something yummy for my boys’ breakfast.

Streusel Topped French Toast Casserole

This Streusel Topped Gluten-Free French Toast Casserole may look complicated, but it’s totally NOT. It requires a few simple keep-on-hand ingredients you likely already have in your pantry, plus no overnight waiting like so many breakfast casseroles do.

The apple compote over the top was really … well … just an over-the-top embellishment I added because I had both the apples and the time.

When you can’t sleep, that seems to be what you have the most of — extra time.


Streusel Topped Gluten-Free French Toast Casserole

With a crumbly sweet streusel topping and perfectly baked French-toast center, Streusel Topped French Toast Casserole recipe is a family-fave breakfast!

  • 6 gluten-free bread slices
  • 1 (12-ounce) can evaporated milk
  • 4 large eggs
  • 1/4 cup granulated sweetener*
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Streusel Topping

  • 2 tablespoons sugar
  • 1 tablespoon gluten-free all-purpose flour
  • 1 tablespoon melted butter
  • 1 teaspoon ground cinnamon

Apple Compote

  • 1 apple, diced
  • 1 1/2 cup water
  • 2 tablespoons granulated sweetener*
  • 1 tablespoon arrowroot
  • 1 tablespoon water


  1. Preheat oven to 350 degrees F. Coat an 8- x 8-inch baking dish with cooking spray.
  2. To prepare casserole, place bread cubes in bottom of dish. Whisk together eggs, milk, 1/4 cup granulated sweetener*, salt and vanilla. Pour over bread cubes. Let stand for 10 minutes.
  3. To prepare streusel topping, combine 2 tablespoons granulated sweetener*, 1 tablespoon flour, 1 tablespoon butter and 1 teaspoon cinnamon; crumble over top of casserole.
  4. Meanwhile, make apple compote by combining diced apple, 1 1/2 cups water and remaining granulated sweetener* in a small saucepan; let simmer 10 minutes or until reduced. Combine 1 tablespoon each arrowroot and water to form a slurry; stir into apple mixture and cook just until thickened. Serve over casserole.
